True to Style, and for everyone

Our brewer primarily brews to style, she apprenticed under a brewer who is a certified beer judge, so traditional style characteristics are important and always the goal. She also brews a variety of styles within the ale family so you will always find, a range of beer on tap from cream ales, pale ales, and ambers to browns and stouts. We’ll have 5-6 styles always on tap as well as seasonal rotators and special releases for events. Tracy likes to experiment and we’ll have a series of small-batch brews from our pilot system on tap that we will be looking for feedback on!

Beyond Beer

One of the things Tracy loves about brewing and the brewing and fermented beverages industries is the science behind them and the collaboration within them.  As a member of the Pink Boots Society and the Master Brewers Association of America, we can participate in, learn from and lead experiments in all areas of the brewing/fermentation process. It's not just about the beer.

Sustainable Brewing

  • We’ll send much of our spent grain to local farmers to be used as animal feed, and some we’ll save to make tasty healthy treats at home
  • We are investing in a sustainable wastewater treatment system, a Membrane BioReactor (MBR). MBRs allow for the wastewater from the brewing process to be side streamed on-site allowing the energy and water footprint of wastewater treatment to be dramatically reduced.
  • We'll be looking local as much as possible for brewing ingredients, utilizing state hop co-ops and Wisconsin and Minnesota Maltsters.
