This twist on a classic Saison boasts notes of bright lemon peel, clove and spiced herbs, along with a big aroma and finish of earthy roasted beets, which are the reason for its beautiful pink color just like Tracy’s pink boots!
The Pink Boots Society has been Tracy’s sanctuary for 10 years. Now that she’s the Pink Boots chapter lead for Wisconsin, one of her goals is to provide ample opportunities throughout the state for female identifying people in the industry to build community and learn more about what they love! When Erica, Head Brewer at Tumbled Rock, offered to host an educational brew day in Baraboo, Tracy was in! While Tracy and Erica developed the recipe, Tracy reached out to vendors, current and past members, and all the Wisconsin wineries, cideries and distillers that she could. The response was amazing! Two Track Malting from Nebraska donated the entire malt bill and joined the brew day in person. The Wisconsin Hop Exchange donated the hops and sent one of their farmer members to do a presentation on sustainability in hop farming. The Yeast Bay helped us develop an outstanding culture and provided it at cost. Most importantly, we had a great turnout from breweries, a couple wineries, and a distillery. On brew day we learned more about the Saison style as well as how to most effectively use adjuncts like beets in the brewing process.
Our biggest takeaway is that women need to continue to support women and not let someone “Beet You To It” because you didn’t take a chance!
